Roasted Pumpkin & Tomatoes Soup

Ingredients
  • 1 large pumpkin, peeled, seeded, and diced into cubes
  • 3 large tomatoes, diced
  • 4 cloves of garlic
  • 1 medium red onion, chopped
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper 
Directions
  • Preheat the oven to 350°F.
  • Diced pumpkin, red onions, tomatoes and garlic. 
  • Place diced pumpkin, red onions, tomatoes and garlic into the baking tray.
  • Season with salt and pepper.
  • Bake for 20 minutes or until they are roasted and tender.
  • Add the roasted vegetables into a blender to puree soup
  • Add vegetable broth into the blender. 
  • Serve warm and enjoy!
