Roasted Pumpkin & Tomatoes Soup






Ingredients
- 1 large pumpkin, peeled, seeded, and diced into cubes
- 3 large tomatoes, diced
- 4 cloves of garlic
- 1 medium red onion, chopped
- 1 cup vegetable broth
- 1 tablespoon olive oil
- Salt and pepper
Directions
- Preheat the oven to 350°F.
- Diced pumpkin, red onions, tomatoes and garlic.
- Place diced pumpkin, red onions, tomatoes and garlic into the baking tray.
- Season with salt and pepper.
- Bake for 20 minutes or until they are roasted and tender.
- Add the roasted vegetables into a blender to puree soup
- Add vegetable broth into the blender.
- Serve warm and enjoy!
