Here is a simple recipe to make oatmeal sugar biscuits (9 Batches)

Ingredients:

  • 75g of unsalted butter (Room Temperature)
  • 75g of granulated sugar
  • 2 tablespoons of honey (Honey of your choice)
  • 75g of all purpose flour
  • ¼ teaspoon baking soda
  • 75g of old – fashion oats (Oats of your choice)
  • 1 egg
  • ½ teaspoon of Vanilla Extract
  • Raisins or chocolate chip (optional)

Instruction:

  • Preheat your oven to 175°c. Line baking sheets with parchment paper.
  • In a saucepan melt the softened butter and the honey together.
  • In a separate bowl beat the egg and then stir in the vanilla extract.
  • Mix the melted butter/honey mixture with the egg/vanilla extract mixture.
  •  In another separate bowl for the dry ingredients whisk together the flour, baking soda, and the granulated sugar.
  • Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  • Add in the oats and stir.
  • Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10 to 12 minutes or until the edge are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.
